Product Description
Wheat malt is made from selected winter wheat from Germany, France or Denmark. It is used with a share of at least 51% for wheat beers. In proportions of up to 25% it gives Kölsch and Alt a typical aroma. The chemical structure of the constituents of wheat differs from that of barley. The purification work is made more difficult by viscosity-increasing pentosans. An intensive decoction mashing process with a low starting temperature and an intensive protein rest is recommended.
