This parameter measures the non-volatile substances dissolved in water before fermentation (mainly malt sugar, proteins, vitamins and flavorings). Nutrients in the juice, such as the sugar content, can be excellently determined refractometrically via the refractive index. For this purpose Hanna Instruments has developed the HI968xx series, digital refractometers that provide precise and fast results when determining e.g. Brix, sucrose, fructose, glucose, or dissolved solids.
