In breweries, CO2 is often used for carbonation, blanketing and purging, among other things, but CO2 liquid/bottles can be expensive and cause problems with over-carbonation. This means that reducing CO2 consumption by replacing it with nitrogen would be cheaper and safer, especially when using low-pressure nitrogen.
